She Gives Traditional Fried Rice a Wholesome Spin by Using Cauliflower Instead of Rice. Yum!!

Low Carb Vegan Cauliflower Fried Rice Video Recipe.

I love chicken fried rice so much that I honestly could live on this dish alone, especially when preparing it using my favorite chicken fried rice recipe. While I love rice, I try to limit the amount of refined grains and starches in my diet. Using cauliflower is a great substitute for some recipes asking for potatoes or rice as it can be mashed, chopped, and even tastes great roasted.

This vegan cauliflower fried rice recipe from nutrition expert Marissa Parry of PurelyB is a joy to make AND eat. She uses cauliflower as a substitute for rice and the texture is so close, you might even forget you’re not eating rice! This low carb alternative ensures you’re getting good carbs and limiting your consumption of refined carbs found in white rice, white pasta, and white bread.
