These pineapple upside-down muffins are baked in muffin tins and they are so good you may want to have two. This recipe is so easy to make that kids will love making their personal pineapple upside-down mini cakes for dessert!

Ingredients:

  • 2 cans (20 oz. each) DOLE® Pineapple Slices
  • 1/3 cup butter or margarine, melted
  • 2/3 cup brown sugar, packed
  • 9 maraschino cherries, sliced in half
  • 1 package (2-layer) yellow or pineapple-flavored cake mix

Watch the pineapple upside-down mini cakes video for directions and bake at 350° F. for 20 to 25 minutes or until a wooden pick inserted into the center comes out clean. For extra pineapple flavor, don’t forget to use the leftover pineapple juice when preparing your cake mix. If you don’t have enough pineapple juice, simply add enough water or milk to get the perfect measure that your cake mix asks for.

Pineapple upside-down cake is a classic dessert but this recipe makes cute and personal pineapple upside-down muffins that are extra yummy. Don’t forget to serve them with ice cream!
